Bright straw yellow colour with a complex and lifted nose showing preserved lemon, quince, pineapple, cinnamon and clove. This is a full bodied chardonnay with an acidity that keeps the wine fresh and elegant. The preserved lemon and quince characters are also present on the palate and the wine finishes on a delicate crème caramel note.

Winemaking  Comments:

The grapes were whole bunch pressed and fermented by a combination of wild and commercial yeasts in premium French oak and stainless steel barrels. The final blend used barrels from both the Locust Lane and Rosomel vineyards after having the wine spend 10 months in barrel prior to blending and bottling.
